Friday Night Meals on the GoOoOo

Today's Workout:
45 min spinning class

OMG is all I could say when I hopped on the saddle again today for a spinning session. Since my body hasn't acclimated to the stationary bike, my inner thighs and legs are super sore. I suppose it will subsided in a couple of days, so I have decided to take a few days off from the bike and I'll run instead so that the soreness could go away.

Well as you all know, it's Cinco de Mayo weekend and instead of partying it up I'll be working the night shift the entire weekend. Just my luck Yay!!!! Anyway, as I have mentioned before, I don't typically eat out so I spent a couple of hours today preparing my meals for the weekend.

On the menu for Friday night:
Meal 1: Brown rice, grilled chicken (w/ curry) and avocado
Snack 1: Carrots and hummus
Meal 2: Quinoa w/ black beans, corn, tomatoes and avocado (Getting my Mexican on =)
Snack 2: An orange with Greek yogurt
Meal 3: Veggie salad in a Mason jar
I keep all my meals inside of a big blue lunch bag in the front passenger seat of my patrol car.
Food makes me happy, especially when it tastes good and it's healthy =)
You're probably thinking that I take a lot of food to work and I do, but that's because I work a 12-hour shift, so my belly needs it!!!

I am thankful for the job that I have. Even though
I work the night shift and I work on holidays, I have
a fulfilling job that allows me to contribute to society
and it offers me the opportunity to help people.

  1. That's great that you pack your food for your shift! This weekend I'm running a 190 mile relay race from Calistoga to Santa Cruz, California... the weekend after running a marathon! Craziness ;)

  3. Gotta love that leg burn Erika...I am just addicted to!!! I just don't like knowing the only way to make progress is jumping on the bike again. Get after it lady!!!
