Tasty Thursday: Quinoa salad with Black Beans and Corn

Today's Workout:
1-hour spinning class

Strength Training:
  • Dumbbell squat 3x20
  • Dumbbell bench press 3x20

  • Dumbbell lateral raise 3x15
  • Step-ups 3x10 (each leg)
  • Dumbbell hammer curl 3x20
  • Standing calf raises 2x30
  • Overhead tricep extension 3x20
  • Barbell deadlifts 3x20

Today's recipe is: Quinoa with black beans and corn
I love love quinoa because it tastes awesome and it's high in protein, magnesium, calcium and iron. Quinoa actually has a nutty flavor and it goes great with southwestern flavors and of course cheese. I'm not a cheese eater, but if you like it go for it. Everything in moderation!
  • 1 cup uncooked quinoa, well rinsed
  • 1/2 teaspoon salt
  • 2 cups water
  • 1/3 cup diced red onion
  • 2 tbsp lime juice
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup of fresh corn, drained and rinsed
  • 3 medium tomatoes, seeded and cut into chunks
  • 5 ounces queso fresco (optional)
  • 1 jalapeƱo, seeded and finely chopped (optional)
  • 1/4 cup chopped cilantro, including tender stems
  • 3 tbsp olive oil

    1. Put the rinsed quinoa, salt and water into a pot and bring it to a boil. Cover and simmer gently until the quinoa absorbs all the water, about 10-15 minutes. Remove from heat and let sit for 5 minutes. Place into a large bowl and fluff up with a fork to help it cool more quickly.
    2. While the quinoa is cooking, prepare the rest of the salad. Soak the red onions in the lime juice and set aside. Soaking the onions in lime juice (or lemon juice or water) helps take the edge off of them. Mix the prepped black beans, corn kernels, tomatoes, cheese, jalapenos, cilantro, and oil into a large bowl.

    3. When the quinoa has cooled, mix it into the bean mixture. Add the red onion and the lime juice and add salt, more oil or lime juice to taste. Serve warm or at room temperature. ENJOY!

    1. Yes! I love quinoa and I get a huge bag of it from Costco :D

      I like making it in my rice cooker, and then serving it with a stir fry, or over a salad, or in a burrito.

    2. That recipe looks amazing! I love quinoa but never cook it as much as I'd like. I add corn/black beans/salsa to EVERYTHING (nachos, fish, chicken, salads...everything).

    3. So glad to see that you are getting better! Get that work out on girl!! I LOVE quinoa! Its such a forgiving staple. I get it in bulk too and alternate it w my brown rice. I can eat it in all my savory meals but havent been able to find a sweeter recipe that I like that uses quinoa :-( Just as well though...sweeter gets me in trouble!

      1. I'm with you on that sweet stuff. I actually tried a "sweet" recipe once with quinoa and it wasn't great. Maybe you'll like it. Here's the recipe:

        Chocolate banana quinoa: Boil 1/2 cup raw quinoa in a mix of 1 cup almond milk and 1/2 cup water. Once it boils, reduce to simmer for about 10 min, stir occasionally, until liquid is absorbed by quinoa. Then transfer to a bowl and mix with 2 tsp cocoa powder and 2 tsp honey (I used agave nectar). You can also mix in mashed bananas.
