Paleo Cuban Picadillo

Today's Workout:
4 mile run

Hello friends and happy hump day! As you can see, I kept today's workout very easy and simple. I am super soar from yesterday's HIIT workout,  so I didn't want to push myself too hard today.

Anyway, I was thinking of an easy and healthy ground turkey recipe to make for dinner tonight and then it occurred to me: Turkey Picadillo! Picadillo (pee-cah-dee-yo) is like a Cuban version of a Sloppy Joe, but better! The typical ingredients include ground meat with vegetables. It's usually made in a sofrito, which is a sauce that includes garlic, onion, peppers and tomatoes cooked in olive oil. It's super delish and highly fattening! So, I came up with a different recipe that resembles picadillo, but using turkey instead of meat.

Gotta keep the Cuban tradition alive =)

Paleo Cuban Picadillo
(Oh, the irony in this title!)
-1 pound ground turkey
-3-4 ripe tomatoes, chopped or one 15oz can diced tomatoes
-1 medium onion, chopped
-4 garlic gloves, minced
-1/2 cup beef stock
-1/2 cup pimiento olives, sliced
-1/2 cup raisins
-1 tsp cumin
-1 tsp oregano
-sea salt and pepper to taste
1. Cook the turkey in a frying pan until browned.
2. In the same pan, add onion, garlic, cumin, oregano, broth and tomatoes. Cook until veggies are tender.
3. Once the veggies are cooked, add the olives and the raisins.
4. Season to taste with the sea salt and the pepper.
5. Simmer for 10 minutes.
*Serve over brown rice, lettuce (to make lettuce wraps), or squash (they're in season, yum!).
